My son is a fanatic for all things airplane.
So, for his 3rd birthday party this year, we had an "airplane party." Invitations were written on paper, which was then folded into paper airplanes and "flown" into our friends' mailboxes. Because it was a 3-yaer-old party, there weren't many structured games, but I had put out every one of my son's toy airplanes, his airport set and even had a small library of his books about planes set up in one corner of our basement (the party room). We also hung an airplane piņata as a decoration (but didn't use as a piņata). As the kids arrived, they were taken over to the tables, where we had cookies cut in the shape of airplanes for them to decorate with icing and sprinkles. We had a gym parachute, and played games with it, using music like "Flying on an Airplane" from "Barney." I also had a game set up where I'd wrapped noise makers for each guest in a different color tissue paper. My husband hid them around the room. Then, each child was given a square of tissue paper and when we said "Go!," the kids went to hunt for a wrapped package that matched the color of their square of paper. The cake was a fighter jet cake (I got the recipe from the Birthday Express website), and the goody bags included die cast fighter jets. The kids had a great time, and two months later, my son still goes up to people (mainly strangers) and says, "I had an airplane party!"
